Cedar Planked Salmon

Sorry...I have no pictures today. My husband took the camera to work. But trust me. It was terrific. I used my leftover cedar plank (they usually come in a package of two) and made cedar planked Salmon.
Here is the deal. I love anything smoked. I love the taste of any form of meat that has been slowly cooked over hickory or cedar. I love it! That is what cooking on a plank does. It smokes the salmon and causes a harder exterior. It is so good. If you have never cooked with a cedar plank...PLEASE PLEASE go get cedar planks. Try it. It will become a staple in your cupboard.

Cedar Planked Salmon

1.5 lbs of Salmon
2 TB of Chili Powder
Salt and Pepper
Olive oil
Honey

How simply is that?
You must let the plank soak in water at least an hr. I let it soak longer. The longer it soaks the better the result. When I was ready to grill I dried the plank and oiled the side the fish will sit on. I put the fish on the plank and rubbed the chili powder into the Salmon and I added salt and pepper. I topped the salmon with some honey. Honey causes the exterior to caramelize. The honey also adds sweetness to the spiciness of the chili.
Then I put the plank directly on the grill and grill until the Salmon flakes.


My Rice for my Husband

1 box of New Orleans Style Rice (Zatarains)
2 cps Spinach
1 can of diced tomatoes
S and P

I followed the direction of the box and then when the rice was about done (25 min). I added the spinach, diced tomatoes and salt and pepper. This is really good (and spicy) with fish.

A Salad for Mommy
For me......I used the salad I made last night. (I added beets) I put a huge helping of salad on my plate and topped with beets and the salmon. I used a balsamic vinaigrette with it. Man!!! It was so good!!! Not only was this a very healthy meal! It tasted amazing!!!

The ingredients (spinach, romaine lettuce, carrots, cucumbers, tomatoes, beets and then I topped with the Salmon)
