INGREDIENTS
1 1/2 cups milk
3 egg yolks
1.5 tablespoons vanilla extract
1 1/2 cups all-purpose flour
3 tablespoons sugar
5 tablespoons melted butter
In a large bowl, mix together the milk, egg yolks and vanilla. Stir in dry ingredients (flour, sugar, and melted butter) combine with wet until well blended.
Heat a crepe pan over medium heat until hot. Coat with vegetable oil or cooking spray. Pour about 1/2 cup of batter (if you want a big crepe or 1/4 for a small crepe) Check with spatula when it is ready flip it.....
Fill with strawberry's or whatever you like and top it with whip cream! Yummy

#2 Beef Leftover Recipe: Mexican Shredded Beef
First of all, I love to use my leftovers and try to come up with as much unique idea I can. Second, I love using shredded mexican meat because you can use it for tacos, burritos, nachos, sandwiches and even pizza. This I threw together with the leftover Roast from Friday. It turned out amazing. Geoffrey loved it!!!
I used the left over Roast about 3lbs.
2 packets of Sazon (It is Mexican seasoning found in a box. It is little packets!)
1 beer
1 can of Enchilada sauce
4 jalapenos (If you want it spicier add more jalapenos) I did not take the seeds out because Geoff loves spicy, but you can if you would like. I sliced the jalapeno into fours.
I threw this all in my pan and put it in the oven on 250. Then we went strawberry picking.(3-4 hrs) When we got back I shredded it. (It should easily shred) and I made awesome tacos. (Cheese, Guac., and Salsa. Homemade is best) It was perfect!
