Beer Can Chicken

This meal is so simple. It tastes awesome. It is a cheap dinner and it is made with beer...What more could you want? LOL. Anyway, my husband and I make this almost every weekend. We love it! We like to cook together on the weekends. He mans the grill and I make the sides in the kitchen. Today I made homemade pickled beets, my salsa (below) , a huge salad and green beans. (below)......Yummy

Beer Can Chicken
2 cans of beer, does not matter what kind. (Dump half...Or drink half. LOL)
2 whole chickens (3 to 4lbs each)
2 Weber Seasoning Packets
4 TB olive oil (2 TB for each bird)
Cooking string

1. Preheat Grill. Rinse and dry chicken. Rub with the dry rub. (I used tomato pesto for one, Black Peppercorn for the other). Put the bird on the can of chicken and tie its legs around the can. Put 2 TB of olive oil on each bird.

2. Grill the bird for at least 2 hrs. (We cook ours until the legs are falling off the bone.
This chicken is amazing. We love it. I eat it with a salad and my husband loves it with rice and the green beans (recipe below).


This was my dinner with my pickled beets on top of my salad with a basic balsamic vinegar and oil:

Pickled Beets

2-3lbs of beets
2 cps water
2cps sugar
2cps white distilled vinegar
salt to taste

1. Boil beets (almost like you would potatoes) until tender. Drain beets. Add vinegar, water, sugar and salt. Boil until salt is dissolved.

2. Peel beets as the brine warms up. (HINT: It is easier to peel with a spoon...I know that sounds weird, but it pulls it right up). Slice the beets and add to brine.

Refridge!

Green Beans


2lb Green Beans

1/2 Lg. Sweet Onion, cut in half then sliced

1 cp. Chicken Stock (Homemade)

1 tsp. Lawrys Salt

1 tsp. Garlic Salt

1 tsp. pepper

(This is really good if you cube ham and cook in the green beans)


1. Throw it all together in a pan and cook on medium heat for 2 hrs.


I will be posting lots of ways to use your garden veggies. This is very good. I usually make my green beans with lots of butter and I came up with this idea to cut some calories and fat. It taste just as good, if not better. Try it! It is an incredible side dish!

Fried Green Tomatoes, Ham and Egg Sandwich

I made this for my hubby this morning. I never had fried green tomatoes before. I was pleasantly surprised at how incredible they tasted. I breaded the tomatoes with 1/2 cp flour, 1.2 cp bread crumbs, Lawrys Salt, Cayenne Pepper and Pepper.(Peppers and Salt to taste. Geoff likes it spicy so I add a little more cayenne) I dipped in eggs and water and then the breading and fried it in a few TB of oil. MAN!! They are so good!!!
2 Slices Rye (Toasted)
4 Slices Muenster Cheese
A few slices of ham off the bone
2 fried Eggs with salt and pepper
2 TB minced jalapeno
2 Fried Green Tomatoes
1. I toasted the bread and as soon as it came out I topped both slices with 2 slices of muenster. I then put the two fried green tomatoes on one slice.
2. I fried the eggs with a little oil and put the ham in the same pan to brown it.
3. When the eggs where done I put in on the slice of bread with out the tomatoes and then topped it with the browned ham and jalapenos. I put the second slice of bread on top with the tomatoes.....WHOLOA!
