Strawberry Banana and Pecan Bread
1/4 cup softened butter
1/2 cup sugar
2 cup flour
1/2 tsp salt
1 tsp baking powder
1/4 tsp baking soda
1 egg
1/3 cup of nonfat vanilla yogurt
1/2 cup pureed strawberries
2 bananas
1/2 cup pecans
Preheat oven to 350 degrees. Coat a loaf pan with cooking spray. Cream together the butter and sugar with a mixer. Add the egg mixing thoroughly. In a separate bowl whisk together flour, salt, baking powder and the baking soda. Slowly add the dry ingredients into the butter mixture,


I pureed Bananas, Strawberries, yogurt, and pecans. Then I slowly mixed it into the dry ingredients, butter and sugar. Then I put it in the pan and baked it for about 45- 50 minutes.
Yummy! What could be better with a big cup of coffee!!??

Wow, what an interesting recipe! I often use applesauce in place of half the oil in my banana bread recipe, but I never would've thought to put strawberry puree in my banana bread...cool idea!
