1lb pasta
1 Recipe of my meatballs (Find below)
2 eggs
1/3 cp. parm. cheese
salt and pepper
1. Bowl the pasta al dente. While cooling mix the eggs, parm, salt and pepper. When cool add to the pasta and press into a 9 in. Spring pan. Form like a nest.
1 1/2 cp. Ricotta
1/2 cp parm. cheese
1 egg
salt and pepper.
2. Mix this together and add to the top of the pasta.
2 TB butter
2 Red onions, sliced thin.
3. Caramelize onions and put on top of the ricotta mixture. Bake for 15 minutes

3 cps. Mozzarella Cheese
4. When done. Add 1 cp. sauce and then 1 1/2 cp. mozzarella. Add Meatballs and 1 1/2 cp. sauce top with rest of cheese. Bake for 30-45 minutes until bubbly.

ReplyDeleteThere's a recipe on Food Network that I tried several years ago and will bust out every once in a while. It's a pie much like this one, except it has fresh basil, tomatoes (I used sundried), black olives, fontina, feta and parmesan cheeses (plus I added sauteed mushrooms to mine), and it was outrageous. There's something about cutting a wedge of pasta/cheesy goodness that sends shivers of delight up my spine ;) HA!
I was thinking it might take a while before we got another post from you...that Reuben bread looked like you'd be eating it for months ;) ;) ;)
This looks and sounds delicious! I love the idea of the caramelized onions for added flavor. You could also try adding a little freshly grated nutmeg - it adds a really subtle and lovely flavor.

Oh, gosh. That looks fantastic! It would make a nice alternative to deep dish pizza ... and might even assauge Peef's cravings for a meatball sub! YUM.
