Kumquat Marmalade

I have to admit, I have never heard of Kumquats. My girlfriend had a Kumquat tree and gave me an overabundance amount of fruit. WOW! They are so sweet and taste so amazing. I had to make something with them and QUICK!

My husband loves Orange Marmalade, so I found a recipe with a Kumquat twist!

My recipe:

3 cps. Kumquats, Deseeded and Rinsed
3 Oranges, Deseeded
4 cps. water
4 cps. sugar
1 lemon, juiced and discarded

1. I deseeded the oranges and Kumquats and gave them a rinse. I then threw everything in the food processor with the lemon juice. I pulsed a few times. I then added the sugar and water and let sit over night.
2. I brought to a boil and then let it simmer until it reached a 220 temperature... It took awhile. Be patient.

3. I then put them in sterilized jars. Let sit in a cool temperature.

I can't wait to dig in this morning!!!!

I am not sure if I would know a loquat or a kumquat, but she is right the ones I saw in the store looked a little different, more orange, but hey if it is good on toast with tea I will take some!

  4. We call those loquats. Cumquats are tiny citrus.
But I bet the marmalade is wonderful anyway!

  7. Fabulous! I've had kumquats dining out and there's an excellent guest post on my site with a recipe for kumquat ice cream, but I myself haven't cooked with them yet. I always see them at my supermarket, so I should pick them up soon!

  8. So let us know how this tasted ... you know we are dying to know - our kumquats come in a lot later than now, summer and again in the fall, I would think your area would not be too much different - the orange and sugar should have made a big change as most rinds are where the sweetness is found and the juice is actually bitter ...but then there are many varieties I suppose,,, so let us know, now, you hear....
